Pinterest Dinner

Here I am writing my second blog, I have not kept my promise on writing a new blog once a week. I lack a little thing called motivation but I am going to do my best and find it. Valentine's day I had the urge to make a few things for dinner from Pinterest. Kelly, Layla, and I all went to HEB for some major shopping. They were having a special that if you bought two steaks you get baked potatoes, salad, salad dressing, and cookies free. So...Kelly wanted steaks and honestly I did too. There went my pinterest dinner. So today I got the urge again to do the pinterest dinner. Last week I pinned chicken rollatini stuffed with zucchini and mozzarella and also spaghetti squash cakes. Let me start off by telling you that they were a hit tonight! My FIL(father-in-law), MIL(mother-in-law), and husband all loved it. My husband and I don't eat many vegetables and with a 9 month old who is supposed to start eating what we eat, I figured it's time to start making an effort into eating healthy. Eating healthy doesn't have to be bland and nasty. There are good healthy recipes out there...you just have to find them. Pinterest is awesome!! I didn't follow the recipe exact. HEB didn't have Romano cheese or I just couldn't find it so I left that out. Also, I only made 4 chicken breast and I stuffed them to the max. Had no need to make 8 chicken breasts, but other than that I followed it step by step. Now, for the spaghetti squash
there are a few things I would change. For one if you have a nonstick pan, I wouldn't spray the pan before hand because it just gets smokey and honestly there is not much of a need. Make sure to drain the water from the spaghetti squash before mixing the other ingredients. Today was the first I've ever cooked spaghetti squash it does have a lot of water, at least mine did. I do cook the squash in a pan of water in the oven so maybe it had extra water from that, not sure though. The batter seemed a little watery so I added about another big spoon full of flour. When it was all cooked the squash patties looked a lot like pancakes but tasted like an omelet. Normally I would have taken a picture but I didn't really know that I was going to do a blog until after we started digging into dinner. For dessert I had pureed frozen bananas mixed with nutella. It was a yummy healthy chocolate dessert. It's not my favorite but when I'm really needing a little frozen sweet treat without the calories as the other desserts this is for you! Tomorrow I'll take pictures...I'm making pumpkin spice donuts(yes, it's from pinterest)!! I'm super excited. Ok they probably aren't very healthy but we all have to have a special treat every now and then!
